Speaking as a teacher, I agree with Taryn.  If I am talking to 
another teacher in front of students- I always use a teacher's last 
name.  It is professional, respectful and a matter of courtesy.  I 
will even do this if a teacher is younger than me.

But it occurs to me that there might be other reasons that Snape 
refers to McGonagall as Professor.

1.  In PoA, at the Three Broomsticks (I apologize for no canon 
citations-I am at work and my friend has my books anyway) Prof. 
McGonagall discusses Sirius and James.  This is where Harry learns 
that Sirius is his godfather.  McGonagall was obviously their 
professor.  She mentions the number of years she has been a professor 
in OOP (again apologies for no canon).  If she was the 
Transfiguration teacher for James and Sirius-then she also taught 
Severus Snape.  As someone who has worked with a former teacher-it is 
very difficult to call a former teacher by their first name.

2.  Also, Snape seems like someone who hasn't really gotten close to 
anyone.  What does he do (or any of the other professors for that 
matter) in his spare time? So I doubt he would admit to any fondness 
for a colleague or even anyone else.

Just a question from a newbie (only my second post)-  but what 
exactly does FILK stand for?  I know what it is and some are very 
entertaining BTW :) I was unable to find the acronym in the files.

Pam- a teacher who will be on vacation in 3 days, who wonders how she 
will keep up with the volume of posts and who is dying to know where 
Hogwarts professors go on their summer vacation...esp. Snape.  He 
really does need a tan :)
