Since Ron's now a prefect & on the Quidditch team does that mean he
will also be head boy & Quidditch captain per his view into the
Mirror of Erised (SS pg. 211).

Now I was thinking about this after reading the new book & had to
review SS just to make sure that I wasn't thinking of something
else. So how can Ron be made captain with only 2 years left at
Hogwarts - won't Harry be made captain b/f him as he was on the
team longer?

Yes, I think he will. As soon as I found out Ron being made Prefect AND
Keeper, I was absolutely sure of it. If you haven't noticed, Ron seems
to have quite a knack for predicting the future. How can he be made
Captain? Pretty simple... the only ones left on the team next year will
be Harry and Ron. I think Ron will actually be good (he was good at the
end). I think Harry may be captain next year, but give the position up
to Ron later. Here is why: being Captain means you must be good with
strategy. It has been drilled into us over and over again how good Ron
is at chess. It has also been drilled in how much he adores Quidditch.
If he isn't so great now, he will be because he will practice like mad.
Harry is a good leader and good tactician, but he isn't such a great
strategist. Harry can always win the battle, but Ron is they guy who
can win the war (see Dumbledore is Ron theory). By seventh year, Harry
will have a great deal on his plate, what with the 'must kill Voldie'
thing on his head. For the same reasons DD chose Ron over Harry for
Prefect, I think that Harry may concede the Captain position on the
Quidditch team to Ron.
