Maybe the students at the match saw the patronis, but didn't know 
what it was.  Or perhaps they were busy looking at the fake dementors 
and only a few people saw the patronus.  By the time they looked up 
to see it could have disappeared.  After all, didn't Lupin say that a 
patronus is very advanced magic?  The students might not be that 
familiar with them and therefore it might not have immediately 
occurred to them that this is what they were seeing.
