OoP: What Snape is really doing out there...

That`s an interesting theory, but doesn`t Snape bring up that the 
Dark Lord is highly skilled at Legilimency, stating that "The Dark 
Lord almost always knows when somebody is lying to him." (pg.531), 
further proving this when he, Voldemort, sees the truth in Harry`s 
eyes re. the smashed prophecy. 

I could see Snape more easily in a role with other wizarding families 
that perhaps were involved in the dark arts without ever actually 
joining up with Voldemorts ranks. 
Who better than Snape to know who these families are. 

My question regarding Snape is, How can families such as the Malfoys 
still tolerate him teaching their children, much less as the Head of 
their House?
