Regarding the Date and the Interview for the Quibble, I don't think
Hermione was sabotaging Harry and Cho's date. The Hogsmeade weekend
was coming up and she had realized that there was only one way to
begin to turn the tide of public opinion. Note that there would be
absolutely no chance for Harry to be interviewed on campus.
Therefore it /had/ to be that weekend.

But also note that she told Harry he could bring Cho along -- this
is not sabotage it is compassion. Hermione knew that Cho was
mourning for Cedric and that Harry was reticent to speak of the
event. If Cho had come along, she would have heard directly from
Harry everything that had happened, she would have understood why
Hermione wanted to see Harry that day, and would probably have
appreciated Hermione's benevolence in making sure she could be
present for the interview.
