I find it interesting that none of the deatheaters seem to care that

I think that Hitler's attitude to the Jews is pertinent here. Hitler 
believed (IIRC) that he had Jewish blood from his father's side. His 
hatred of his father is perhaps one of the causes of his hatred of 
the Jews. the Nazis were therefore led by someone who believed 
himself to have Jewish blood. Yes, the Death Eaters attitude is 
hypocritical, but it does have real life precedent.

In terms of the half-blood definition; I think the term is used to 
describe someone who is not a "pure-blood". We are not given a 
definition of what a pure-blood would be. Perhaps again, it would be 
similar to the Nazi definition of Jew, which I believe went back 3 
generations.

This is not actually true. In PS, Dumbeldore arrived in time to pull 
Quirrell off Harry. Harry felt Quirrel wrenched from his grasp, but 
then lapsed into unconsciousness. Voldemort left Quirrel to die" (p. 
216 PS UK edition) - but this happened after Harry had lost 
consciousness, so Harry never saw Quirrell die.
