Hmm... Ive often wondered about the other two memories in Snape's 
pensieve... I would expect the three memories to be kept hidden 
would be 

1) showing reason's for Snape's deep hatred of James, Sirius,(the 
one which we've seen in OotP)

2) showing the turning point whcih effected Snape enough to spy for 
the order (i'm thinking along the lines of using a forbidden curse 
on someone he cared for/ knew was completely innocent/ had a deep 
respect for)

3) probably some 'adult' stuff... need I say anymore

Thats a really good thought, that I hadn't considered... hmmm....
