Relax.  She not a TERRIBLE mother or person.  I think we've all know 
a parent who was a little over protective.  Bill and Charlie seem to 
have ended up fine (and she still bosses them around "cut your 
hair").  
You have to remember she was around during very frightening times, 
and her son's best friend is target numero uno.  It like your 
grandparents growing up during the depression.  They thought 
differently than we do now, and did things differently.  It's a 
generation gap, remember they have 3 completely grown sons.

You are having the exact response to Ms. Weasley's nagging as JKR 
wants you (and Ron) to have.  A rebelous one.  Well done.  
She nags and is protective and kind, but she is not horrible.
