Yet he doesn't know Lupin is a werewolf, which they are also 
discussing, since it was curiousity about where Lupin went every 
month that allowed Sirius to play the Prank on him later. It seems to 
me that he probably could hear MWPP talking but was paying no 
attention because he was thinking about his paper, but the pensieve 
plays everything back not just the bits he noticed. If that were true he might not know their nicknames.

Who says that he doesn't know that Lupin is a werewolf?  This memory occurred during their OWL exams, which take place very near the end of the school term, so it would stand to reason that Sirius has already played the prank on him....remember that they have by this time become animagi...Sirius basically calls Wormtail a dunderhead for not knowing the ways to tell a werewolf because he has been running with one.  So it is very possible that Sirius has already played the prank on Severus and he already knows that Lupin is a werewolf by the time this memory takes place.
