Another possibility is that Lupin's precise activities will never be
spelled out because they may not matter to the arc of the story. From
JKR's standpoint that may be all we need to know - Lupin is doing
something for the Order, but it's not a necessary detail to actually
put into the remaining two books. I would not be surprised if this is
simply left to the mind of the reader. I suspect that what Snape is
doing is of more importance to the story in terms of both advancing
the action and, once it's revealed, in helping to tie up loose ends.
Not that I don't want to know about what Remus is doing, mind you.
For that matter, I'd like to know what he's been doing since he left
Hogwarts. But, this might not be that important, in JKR's eyes.
Just as she said in her recent chat (I think it was there) that we
won't hear about Harry's grandparents because they're not important
or don't play a part in the the story.
