I think Snape was making excuses to Dumbledore, why he shouldn't teach Harry Occlumency. What if Harry accidentaly reversed the spell (like he did) and saw things he shouldn't see? Dumbledore then presented a solution (the pensive), and alas, poor Severus' excuse was gone.
