There are two problems with Harry having the desire to become a
professor.  The first is the issue of did Harry enjoyed teaching or
resisting Umbridge?  My personal guess is that true answer is in the
middle of the range of possibilities.

The second and bigger problem is Harry's desire to deal with the
realities of being a Hogwart's professor versus teaching a small group
of volunteers who were motivated to learn.  While Harry gets great
satisfaction from seeing Nevile's improvements over time, whould he
get equal satisfaction from dealing fairly with a future Malfoy in his
class, grading homework, or any of the many other administrative tasks
that a faculty member is responsible for?
