Oh, I'm not so sure he'd never practiced that spell before. ;-)  
Remember how comfy Draco was on a broom?  I suspect that he & Daddy 
spent a good bit of time in Draco's pre-Hogwarts life working on all 
sorts of magic--especially dark spells.  If Snape really did whisper 
the serpensortia suggestion to Draco, perhaps he did so because he 
knew it was the kind of thing Lucius was likely to have taught dear 
Draco.
