Dumbledore probably knew that Harry, Ron & Hermione were nearby, and
wanted to give them time to save Buckbeak. He IS a Legilimens, after
all - or at lest that Hagrid had company before they came. (Dishes, I
recall, and Hagrid was inside with some people who had just left,
presumably Harry. Entirely possible that as Legilimens he can sense
Harry's/Hermione's/Ron's mind being present, and TWICE for
Harry/Hermione. Snape can sense Harry under Invisibility Cloak, can't
he? and it is possible that the map uses the same method.)
When he suggests the time-turner: You may save yet another life
tonight - he knows Buckbeak has been saved by them. He doesn't,
however, know if it was the first or second turn they lived those
three hours... He tells them the time he sensed them TWICE, and gives
obscure directions as to where.
