Claudia here (snipping a lot to bring forth my "Snape is DDM!" 
argument):

Since all Snape theories have at core that he is a superb occlumens 
to either fool DD or Voldemort, the fact that we see him quite 
emotional regularly at Hogwarts shows to me that he is DDM. It looks 
as if he feels safe enough at Hogwarts to let it go now and then.

I don't assume that he does it on purpose, but that he is simply less 
on guard there. And when a Marauder (or anything concerning them) 
comes up he simply boils over, something he could never ever afford 
to let happen around Voldemort or his followers.
