I think it's just to emphasise that he does not regard the him who is 
trusted by snape as the real him. He may do, but obviously doesn't 
want Bella to see that. It's a method of stresseing that he has 
compartmentalised his life and that he is "loyal" to LV, IMO. Either 
that or he's turned into one of those irriatting ipie types who always 
talk about themselves like that. "I really want to discover who the 
real snapesangel is, man" etc. If in the next book he goes off to 
nicaragua to swim withthe porpoise or soemthing, we'll know, lol.
