Honestly, the logic in your original post is so torturous in its 
contortions to make the scene not an insult it doesn't surprise me that 
some people read it as you putting forth a Saint Snape scenario.  I 
think a plain textual reading of Snape going for the jugular on 
Hermione is the correct one.
