In all likelihood, Dumbledore probably didn't think to mention it. He
often has good guesses, but we've seen that he can be fallible. :-) I
would guess that anyone coming across a Penseive ought to react with
caution, the same as accidentally stumbling across a person's private
journal. Snape probably didn't think Harry would be so disrespectful
as to look inside one, or perhaps he meant to put it somewhere more
secret and forgot.
