Hermione only took Muggle Studies in third year.  She dropped it at the end so she could have a normal timetable.  However, if JKR was going to kill her off in the first chapter of DH, we could have at least been given a name in PoA.  Certainly, some of us would have had to have done some serious remembering as to where the name fit, but when I first read "Charity Burbage who, until recently, taught at Hogwarts..."  I though, No she didn't!!
