Apparently that's how JKR wanted to end things, but artistically
I think it was a mistake, one of the two big mistakes of the
series. It's no fun to think that for the past 19 years Harry
had just been punching a time clock in a dead end job; no need
to go into details but much better to give hints (like a slight
limp and a bad hand) that his life continues to be as action
packed as ever. The Sherlock Holmes stories often casually
referred to adventures that were never written up by Dr.
Watson, like the time Holmes tracked a murderous orangutan
through the sewers of Paris. I like that.
The other big mistake of the series was not making Percy evil.
Imagine how much more powerful it would have been if the trio
got carted off to Malfoy Manner not because of a slip of the
tongue but because Percy betrayed them! As it is I don't
understand why JKR invented Percy.

Hiding was not their top priority and they were moving around
because they were trying to find Horcruxes, and the Fidelius
spell is so enormously complex it's probably not practical
to set up a new one every night.
