I stupidly forgot one other student and remembered just after I hit the 
Send button. One person is certainly identified in canon as having an 
ethnic background - Blaise Zabini:

'He (Harry) recognised a Slytherin from their year, a tall, black boy with 
high cheekbones and long, slanting eyes....

"Now, do you know everyone?" Slughorn asked Harry and Neville. "Blaise 
Zabini is in your year of course -"''
