If you read the book, Sirius explains that he did not know how
he did it but that he thought the only reason he did not lose
his mind was that he knew he was "innocent" and that isn't a
happy thought so the Dementors couldn't suck it out of him. This
kept him sane and he was able to keep his powers so that when it
all became too much he could transform into a dog. Because the
Dementors cannot see, they feel their way toward people by
sensing their emotions and could tell that his emotions were less
human when he was a dog but thought that was because he was losing
his mind.
