I think Sirius should have spent more time preparing for his DADA exam.
But at any rate, Snape may very well use the same technique--with intention rather than dumb luck. That is, to arm himself with a true, stong thought "I'm protecting Harry for Lily" for example. Then whatever spell to go along with it.
