Wow what an interesting question. I really wonder about things like that. Travelling through time is a wonderful and confusing concept lol. You would have to think that there has to be a reality where buckbeak lost his head and Sirius got the Dementors kiss or why would Harry and Hermione have to go back in the first place (In the british version Ron is in the  hospital wing and it isn't the trio but just Hermione and Harry). The question then would be which reality did we first see? Was the the first time it happened, in which case it stands to reason that Buckbeak was beheaded or was this the second, third ect. Personally I got the impression that this was not the first and therefore Buckbeak was not beheaded.
