Right.  You asked for it, so you are getting it!  This sounds 
worryingly complicated, so if anybody has the guts to try this out, I 
commend you greatly.  I imagine you can change the flavourings to 
rose or lemon if you want.

    1 lb castor sugar
    1/2 pint water
    1 ounce leaf gelatin
    Vanilla
    Raspberry flavouring
    Carmine
 
    Dissolve the gelatine in a teacupful of water over gentle heat; 
do not allow to boil.
    Heat the sugar and remainder of the water and when the sugar has 
dissolved add the dissolved gelatine, boil together for about fifteen 
minutes, stirring all the time: then draw away from the fire and 
stand to one side for twenty minutes.
    Strain it in equal quantities into two warm pans, place beside 
the fire for a few minutes, stir well, then flavour the contents of 
one pan with vanilla and the other with raspberry essence and colour 
with carmine. Turn each into a separate tin, previously moistened 
with cold water, and leave for 36 hours to set.
    Cut the contents of each tin into dice of approximately the same 
size and roll them in icing sugar and cornflower in equal quantities.
