In addition to those discussed already, can I add James Potter to the 
list?  In times of distress, Harry seems to recall his father, and he 
tried to emulate his father in GoF's graveyard scene.  Had Harry not 
decided to die like his father, straightbacked and proud and trying 
to defend himself, he would have been killed.

Others on the list would be:

Dumbledore -- pretty obvious, I guess.

Sirius -- seems to fulfill the roll of warning Harry about dark 
matters and giving him background to defend himself.

Lupin -- Is it OK to put Lupin on the list just because he's so 
great?  No?  OK.  Um, he was the first to help Harry tap into his 
DADA skills.

Crouch/Moody -- also helped Harry tap in to his DADA skills, and 
taught him most of what he knows about fighting dark wizards.
