Hi, Cassie.
First, let me provide Lupin's words: "[Dumbledore] let me into
Hogwarts as a boy, and he gave me a job when I have been shunned all
my adult life, unable to find paid work because of what I am." PoA,
Ch. 18.
My (unsupportable) gut feeling is that Lupin lives in a small town
where word gets around that he is a werewolf, either from rumors or
because someone does check the registry. He is shunned not because
his condition prevents him from holding a job, but due to prejudice.
After all, one can assume that unless Snape is around to brew the
wolfsbane potion, Lupin is still suffering through his
transformations and running around as a werewolf once a month. This
must be dreadful for property values around town. :-) Indeed, one
can also imagine that Lupin must live a transient existence, moving
on to the next town when the neighbors have had just about enough,
making it even more difficult to hold a steady job.
So why don't the Malfoys blow the whistle on Lupin and get him fired
from Hogwarts? Probably because Lucious Malfoy has no reason to pay
attention to the activities of Lupin. There is no reason to think
there is any history between them, so Lucious probably never bothered
to look at the werewolf registry.
