Yeah, we don't know that Snape never told Dumbledore about 
the missing ingredients. And as far as Moody searching his 
office goes, don't forget that Snape is told by Crouch 
Jr.-as-Moody that Dumbledore has authorized him to search 
teachers' offices. Presumably Snape believes him. There's no 
reason for him to tell Dumbledore something he thinks 
Dumbledore already knows.
