Good question especially since I've wondered that many times myself. It
sounds like the MoM employs a bunch of folks and, since Percy managed to
get a job right out of Hogwarts, that they don't require any other
education or maybe they have classes there.
There seems to be retail jobs (Flourish and Blotts, Zonkos) and pub
jobs. There seems to be a yearly slot open at Hogwarts for a DADA
teacher. We've heard about St. Mungos and there is also at least one
prison. Madam Pomfrey is what sounds like the equivalent of a school
nurse. Filch takes care of the grounds and Hagrid takes care of the
game. They have sports figures so the support staff for those folks
(coaches, announces, sports writers, equipment handlers) would also be
needed. They have newspapers and sleazy periodicals so you would need
reporters and editors and probably lawyers to handle the lawsuits from the
sleazy periodicals. Somehow I can't imagine my old turf of programmer
would be needed since they don't seem to have any kind of computers (except
Dudley's broken ones and that's not a part of their world). There must
also be some kind of manufacturing jobs since Zonkos seems to sell a lot of
stuff to the kids. The MoM also takes care of crime enforcement. The
Knight Bus is an alternate form of transportation (and, it seems, where the
students who flunk out of Hogwarts go for jobs...).
Construction? Dragonkeepers (Charlie). Bill works as a spell breaker (or
something very similar) for Gringotts. The goblins seem to control
banking. I wonder if there's a wizard stock market?

I always wondered what Hermione's family thought about the whole
thing. They're dentists and the dental profession pays well. Wouldn't
they want her to do something similar? She's supposed to be the first
witch in her family. I know, don't think too hard about it or the story
line fails, but she's missing the equivalent of high school (ok, the
American equivalent). What about College? It sounds like Hogwarts is a
combination of the two but I can't help but wonder if there are Wizard
colleges. It seems like some of the jobs would require a lot more
education and training.
