    According to the Lexicon page JKR has said there
are no Wizard Colleges yet there are obviously levels
of Wizardry beyond what is taught at Hogwarts so how
does one get advanced training in Alchemy, Defense
Against The Dark Arts, or whatever? 
    My guess is by becoming the student/assistant to a
Master Wizard in the desired field, (up to the 19th
century it was possible to study law and medicine with
practicioner rather than at a college). 
   Which in turns leads to the interesting question of
how Lupin can be a 'Professor' before coming to work
at Hogwarts, (the letters spelling out title as well
as name are 'peeling' and thus presumably old).
Perhaps he is such an advanced Wizardry instructor but
has difficulty getting pupils because of the prejudice
against werewolves.
