The traditional Phoenix makes its nest *only* for its pyre, and uses cinnamon 
twigs in the construction.

Having multiple Phoenices?  Phoeni? in the Potterverse probably means that the 
nesting really is for dwelling and/or breeding.  Fawkes regenerated simply on 
his perch, with no sign of a nest.
