Why in the world would you think Draco would 1) be in a position to
save Hermione or 2) actually go out of his way to save her, or anyone?
If anything has been made clear about Draco in OoP it is that he's a
little shit. In the past people have argued that Draco may in fact be
attracted to Hermione and that is why he taunts her, but based on his
behavior in OoP, any time he calls someone a Mudblood, he really means
it. It would be like thinking a boy has a crush on a girl he calls
the N-word. It doesn't get much worse in the WW than calling someone
a Mudblood, and Draco thrives on being as nasty as he can be.

I also have a hard time seeing Draco going out of his way to save
anyone other than his parents. Even Crabbe and Goyle would go down if
it was up to Draco to bail them out of trouble, IMO. Draco is a top
level coward who is terrified of the Forbidden Forest and the
dementors; would he actually risk either of those things or something
similar if he wasn't saving his own ass? I doubt it.

Last, Draco doesn't show any real understanding of death. He taunted
Cedric's death at the end of GoF and I seem to remember him joking
about Hermione dying somewhere along the line as well. If he was in a
position where someone else was in dire danger and he could get them
out of it, I imagine he'd walk away, thinking
"Hermione/Ron/Harry/Neville can take care of her/himself". Even
though Dad is a DE, he's done a good job of protecting Draco from the
realities of death and dying, giving Draco no real opportunity to see
situations where lives are in jeopardy.
