My (very personal) theory is that Lupin's transformation depends on
the moon rising to a certain position (it's zenith) and THEN being
transformed. Therefore, the sun can set on a full moon night, but a
werewolf won't 'become' until the full moon is at it's highest point,
which coincides with the gang exiting the Whomping Willow at that
exact moment. Whether he's indoors or outdoors, that is the moment
he is transformed. My theory, and I'm sticking too it!
