Toward the end of the transcript (search for "thestrals" or "Jessica
Bell," the girl who asked the question) JKR addresses the question of
why Harry didn't see the thestrals at the end of GoF, at least.  There
are still those minor questions about "Does this mean Harry didn't see
his parents die???" but I believe that they're answered just as well
with JK's explanation that the death has to "sink in."  As a
one-year-old child, there's not much of a chance Harry could have let
his parents' deaths sink in.

I definitely agree here!  I loved the thestrals.  They also make me want
to comb through Fantastic Beasts again and find all the creatures that
may have plot-relevance in the future!  Does the connection between
Quirrell!Voldemort's appearance in the forest and a lethifold's mean
anything?  Is there any validity to the fanfic ideas that Harry et al
will have to go up against a manticore or a chimera or some of the few
really dangerous ones left that they *haven't* had to deal with yet?  I
mean, after thestrals, a basilisk, multiple dragons, acromantula, a
sphinx, a werewolf, centaurs *and* merpeople, there aren't that many
dangerous creatures left, are there?!
