Actually, I think vituperativeness is the least of 
Snape's problems. In fact, that's probably one of 
his more endearing qualities.

So what would teaching DADA bring out in Snape?

Power, ambition, vengefulness? Jo said in the
Albert Hall interview, and elsewhere if I remember
correctly, that D. doesn't give him the DADA 
position for the same reason that you don't lead
a drunk to the bar or Germans to war. (OK, maybe 
she didn't say it in those words, but that was
the meaning...)

In other words, the fear isn't of Snape's 
vituperation, but of giving him the opportunity 
to become power-drunk. His desire for vengeance, 
while debatedly well-founded, is too strong.
