Something Missing From The Curriculum?

Isn't our experience as to what is taught limited to what Harry, Ron 
and Hermione take? There may well be Arts taught and the trio does 
not take them. Hermione takes Muggle Studies and Arithmancy that 
Harry and Ron do not take. I think that the Arts may well be a course 
taken by Ginny or Colin. I do have one question though, how would you 
earn your OWL for say pottery making, when you could transfigure it?
