I'm sure Hermione thought the Centaurs would at most ATTACK Umbridge,
at least, threaten her, but I don't think she KNEW they would murder
her, nor did she intend for Umbridge to be killed. And I think her
primary intent was to create a distraction that would allow her and
Harry to get away from Umbridge (as others have also said).
Next, Hermione is acting in a form of surrogate self-defense or
self-defense by proxy, or whatever the proper legal term for that is.
She is acting in an attempt to save Sirius's life. Also note that
Hermione acted to stop Umbridge from commiting a capital crime against
Harry. Using the Crucio Curse, Umbridge was about to commit a crime
punishable by life in prison; a crime of such unspeakable cruelty that
it warrants that punishment.
Wouldn't Hermione's action to save the life of another person, and to
prevent a capital crime from being commited against her closest friend
be considered justifiable?
I think so.
