I don't know about the Trio being immortal, as JKR herself makes
allusions about "if..." Harry and his friends make it to grownup
status.
But that said, I thought Hermione was going to introduce Umbridge to
Grawp. I don't think Hermione intended on Umbridge dying at all. I
think she intended on Umbridge encountering a _MAJOR DISTRACTION_
that would allow her and Harry to stun her or otherwise get away from
her.
The Forbidden Forest is full of dangers.
The book even mentioned specifically that Hermione was going down the
path to Aragog's brood, and that Hermione had not been there with
Harry when that happened.
So she was going for the Centaurs, and we didn't know that until the
scene happened and she realized how she hadn't thought it all the way
through.
Either way, though, if Umbridge was worth her salt as a witch, she
could've defended herself. An ordinary human would've definitely
been in deep trouble with centaurs, but a witch on the Ministry of
Magic who knew the Cruciatus? I think Hermione didn't consider
Umbridge to be in mortal danger.
But it was a moment of cheer for everyone who hated Umbridge to see
her get carried off screaming.
