Did/Do Frank and Alice know the entire Prophecy??

I think we have to assume Dumbledore would have told the parents of 
any child the prophecy applies to. Short of Evil!Dumbledore, I can't 
think of any reason why he wouldn't.

Which begs the question, what defense did the Longbottoms use? Did 
they also have a Secret-Keeper? Did they use some kind of magic 
suppression spell on Neville to make him seem less magic, and 
therefore, less of a threat?

That is entirely possible. We also don't know what they told. We just 
know they were tortured for information about V-Mort's whereabouts, 
which they reasonably might not have known. 

But we don't know what information they gave out under torture.

No, Dumbledore would certainly not get in the way of them regaining 
their minds. He would put them under protection immediately. However, 
I can't see him being so cold as to keep them insane.
