I wondered this too. Actually, I wonder if the Dementor actually kissed 
Crouch. After all we never see it, but only hear about it. It could be that 
some of the Dementors were on LV side already, so they could have just 
pretended. Also, it might be possible for the Dementors to restore the soul 
by re-kissing the victim.

About the faithful servent stuff. When Voldemort said that he seems to be 
refering to the Death Eaters that weren't in Azakaban. The ones in Azakaban 
were very loyal, but were imprisoned, so they couldn't do anything. But once 
they escaped, why would Vol need his souless, faithful servent. Still...what 
happened to him?
