I'm not going to reply to everything in this post, as I think that Darrin is correct in saying that Voldemort/Quirrell standing in front of the mirror, trying to figure it out isn't a good situation. It seems entirely possible they could have figured something out. So, I don't think that H/R/H were just rewarded for breaking rules unnecessarily. A couple things that popped out at me, though are...

He doesn't just predict that Hermione will be next, he says (American version, pb, page 225):
"But I know one thing - last time the Chamber of Secrets was opened, a Mudblood died. So, I bet it's a matter of time before one of them's killed this time....I hope it's Granger," he said with relish.
Seems apparent to me that he does want her murdered.

I'm pretty sure Quirrell wasn't evil before meeting up with Voldemort, but when he's talking to Harry in the chamber before Voldemort comes out of the back of his head and he seems to be using his own words, he says (hb, UK, p.211):
"A foolish young man I was then, full of ridiculous ideas about good and evil. Lord Voldemort showed me how wrong I was. There is no good and evil, there is only power, and those too weak to seek it."
Sounds to me like he's gone over to Voldemort's camp, even though he doesn't always like the things he has to do. As for if he were freed from Voldemort, what would he do? I can't answer that. However, I notice that when Voldemort isn't "riding" with him, he still does his bidding. He breaks into Gingotts without Voldemort actually in him. He could have escaped or gotten help, but, instead, he does what his master has bid him.
