How do you know that Snape would have continued teaching him if he had ever bothered to ask or apologize?  I don't at all think that this is something we can take for granted.  Snape did, after all, tell him to leave his office and never come back again.  I know that this is something that might not be truly meant when said in the heat of passion.  However, as far as I know there is nothing to support this.  

That said, I do think Harry should have apologized.
