My thought was that Firenze knows something additional about the
prophecy, but something that impacts the wizarding world in general,
rather than just humans specifically.
He tells the students in Harry's class that human Seers are limited,
whereas centaur wisdom is "impersonal and impartial" and that they
watch the skies for decades to discern patterns of evil, etc. He also
mentions that the fight of evil vs. good is about to begin again.
So, my hunch is that whatever coming battle that he's seen in the
stars involves Harry, Voldemort, and possibly the fate of all magical
beings. Perhaps Voldemort, in his quest for immortality, breaks some
kind of Magical natural law (kind of like those time travel paradoxes
where you end up changing things so much that you don't exist!) that
destroys the balance between life/death, or destroys all magic for
everyone. Or something! :-)
Something dire of that magnitude might be enough to get Firenze to
leave his entire world behind. Especially if he feels that by not
participating/warning the humans, then everything he cares about will
likely be destroyed/enslaved/etc. anyway in the coming battle.
Just my thoughts!
