Me:

I think Snape is trying to relive the prank in the shrieking shack. 
He's hoping Lupin will change, run amuk, only this time he, Snape, 
will be the one to subdue him and save the children, instead of 
someone saving him.  In addition, he will also have captured and 
escaped murderer, saving Harry from two people who would have harmed 
him. It wouldn't be as impressive if Lupin was like a tame doggie 
because of the potion.

I think Snape is still deeply embarassed from being rescued at all, 
though the fact that it's James Potter makes it so much worse. This 
is his way to released from the life debt and prove that he doesn't 
need anyone's help.
