My big question is--is the pensieve 'reality' or is it the way that things are remembered from the person's pespective who 'deposits' the memory into the penseive.

I think it's the way things really happened, not how they're remembered. After all, if it was just how we perceived things, Harry wouldn't be able to see the world in technicolor, surround sound, 3-D, eh? Harry can see things that the viewer was not conscious of, but were happening, thus, I think we can trust the pensieve to be exactly what happened, like a filmed record (IMAX), unaffected by perspective. I'd suspect that if we looked at Lupin's memory of the same time period, we would see the exact same thing.
