We already know of one use of dragon's blood, JKR told us herself:

"The San Francisco Chronicle 30 October 1999:

Q: What are the 12 uses for dragon's blood? 

A: I have a very good reason for not telling you -- the movie script 
writer wants me to give him that information for the film. But I can 
say that the 12th use is oven cleaner."

Based on this answer of JKR I think that we can safely say that the 
uses of dragon's blood will come into play. With the exception of the 
last probably, unless someone can think up a good reason to use oven 
cleaner for the final battle?
