Didn't moody!crouch preface these lessons with some statement that
dumbledore thought the class was ready/needed to know about the
unforgiveables? (help requested from canon experts!). In this context,
Barty *had* to instruct everyone. Of course Harry would present a
special interest to him as he explored his ability to deal with such
curses, and DD would have probably instructed moody!crouch to
particularly focus on Harry for obvious reasons.

But given Crouch!Moody's known intentions and unscrupulousness, he
could easily have been lying here, pretending that Dumbledore had
given him permission to demonstrate the Unforgiveables and actually
use one of them on the students. And the students, intrigued by the
possibility of learning such an exciting (and potentially dangerous)
lesson, weren't about to question him. They thought he was the
eccentric and paranoid ex-auror Moody, after all (who, despite being
DD's trusted friend, might blow a hole through the door if they woke
him too early in the morning and who had turned Draco into a ferret in
their view). Crouch!Moody had worked hard to get Harry to trust him
and to see him as an ally against Snape. We, on the other hand, know
that he had ulterior motives for everything, even, as I've noted
before, his seeming kindness to Neville.
Just because Crouch!Moody says something doesn't make it true--unless
he's under the influence of veritaserum--and in this case, he wasn't.
