Well, it all seems clear to me... the teachers who live in the castle
...well, they live in the castle, and the ones who don't ...well, they
don't. (thoroughly warp sense of humor, sorry)
I think our clue for determining who literally lives in Hogwarts
castle can be seen at the head table in the Great Hall. We never see
Madame Hooche there, or Professor Vector, and we rarely see Prof.
Sinistra (astronomy). That's because these teachers live off campus,
and must therefore provide their own meals. McGonagall, Flitwick, and
Snape have living quarters in the castle, and therefore logically,
they also take their meals there.
As a side note, I think this is probably a good indicator of who is
and who isn't married among the staff.
As far as teachers living in their offices, I think it is a case of
the students assuming that teachers will most often be found in their
offices regardless of how late at night it might be.
Next, I speculate that teachers actual living quarters might be
attached to or adjoining their offices. That would make it very
convinient for them, and also explain why they are indeed so often
found in their offices late at night. In addition, it would explain
the apparent student assumption that teacher offices and living
quarters are one and the same.
In terms of the type of quarters provided, I would assume office,
reasonably spacious furnished bedroom by British standards, very
common typical full bathroom (again by British standards), and perhaps
a small lounging area, or perhaps office and lounge are one in the
same. In addition, I assume there are certain common areas like the
staff room that are shared by teachers.
As far as luxurious baths like the Prefect'S Bath, I don't think so,
although, there could be some teacher common areas similar to the
Prefect's Bath or prehaps certain restricted hours on the existing
Prefect's baths during which time access is limited to teachers.
As long as we are on the subject of Prefect's baths, do you suppose
Ron and Hermione were sneaking off to enjoy the use of the Prefect's
bath when they claimed they were performing important Prefect duties?
Perhaps they thought Harry would feel bad if they (Ron and Hermy)
were bathing in luxury while he was stuck in the student showers.
Just a thought.
