I think that in the interview, JK was just saying that her favorite 
animal is an otter, and that is the animal she would hope to turn 
into if she were a witch.

But since she isn't, she used that animal as Hermione's patronus, 
since she has given Hermione many of her own qualities.

Like you said above, I have always thought a person's Patronus 
reflecting something that makes that person feel safe and protected--
like Harry's stag being symbolic of his father. Which made me think 
of something interesting, do you think JK would've given Hermione 
the otter Patronus not only because it's JK's favorite animal, but 
also, perhaps subconsciously, to show that *she* is protecting 
Hermione. Could this foreshadow that Hermione is going to come out 
of the series alive and well? well...maybe not *well*, since so much 
will happen before the end--more battles, more deaths, more 
trauma...but as well as can be expected?

Just a thought.
