1- That wasn't exactly an unambiguous denial.
2- The question was NOT "Is Snape a vampire?" and JKR has plausible 
deniability to say, should Snape prove to be a vampire, "He's a 
solitary vampire, he's not linked to any other vampires at all." 

I think JKR's favorite thing, her secret thrill is to say things 
that leave her plenty of wiggle room when she "whipsaws" us.
